Why study Music Theory?
All too often guitarists pick up their craft haphazardly - learning a chord here, a scale there, perhaps a riff or two. Learning that way may eventually get you where you want to be as a musician, but there is a better way.
Traditionally trained musicians study music in addition to learning musicianship on their instruments. Most pianists, violinists or horn players sight read fluently, and have studied theory, harmony, counterpoint, music history, and other 'theoretical' subjects.
They don't do it simply as an intellectual exercise -- studying the fundamentals of theory gives them a framework to think differently about what they're playing.
Music theory has traditionally been taught at a piano keyboard. That's probably what keeps most guitarists from learning theory... you need to learn a new instrument (at least the basics), and then you need to work to adapt that new knowledge to the instrument you prefer - the guitar.
